This is an excellent cookbook. I have been a Vegetarian for over 15 years of my life, and I am a huge fan of Asian Cuisine and Recipes.(you can tell by my blog name) Jonathan Vine, the author of this cookbook did a great job with the recipes. The book shows a quick way to make your favorite Asian appetizers, soups, main dishes, and desserts.
This book contains Korean, Japanese, Chinese, Viet, and other types of Asian dishes. The prep time for each dish is around 10 minutes. The cook time is almost never above 40 minutes. The serving sizes can range from anywhere between 2-8 individual, it depends on which item of food you are cooking.
My favorite dish in the book is the Vegan Kimchi Soup. I really wanted to post this recipe to show how simple it is to make it!
VEGAN KIMCHI SOUP
Prep time: 10 minutes
Cook time: 40 minutes
Servings: 6-8
Ingredients:
14 oz tofu, cubed
3 cups kimchi, chopped
1/2 pound oyster mushroom
Directions:
1.Heat the oil in a soup pot and stir in the mushrooms.
2. Saute for 5 minutes then add the rest of the ingredients, except the coconut cream.
3.Cook on low medium heat for 35 minutes.
4. Right before removing it from the heat, stir in coconut cream.
5. Adjust the taste with salt and pepper, if needed serve the soup warm in large serving bowls.
